Scones and around the garden !!

                                                                                                                                                                     Here some photos of the last couple of days. Yesterday I felt the desire to making some scones. It was a good idea so I had one for breakfast this morning. It has a pretty good taste with that tangy flavor of the orange and zest.

2 cups all-purpose flour
1/4 cup sugar
1 Tbs baking powder
1/2 teasp. sea salt
12 Tbs. cold unsalted butter,diced
2 extra large eggs,lightly beaten
1/2 cup heavy cream
1 cup dry cranberries
For glaze:
1/2 cup confectioners sugar
4 Tbs freshly squeezed orange juice and zest of orange.

In mixer combine flour, sugar,baking powder and salt. If using a mixer use the paddle attachment. Cut the cold butter into 1/2 inch pieces. Add the butter to the dry ingredients. Mix on low until butter is mixed in and it's in tiny pieces. In separate bowl mix together eggs and whipping cream with a fork. Turn the mixer on low and slowly add the cream and egg mixture.Turn off the mixer once added. Fold cranberries. Turn dough into flowered surface. Add a bit of flower to top of dough, then pat it out into a disk about 8-9 inches in diamenter. Cut the disk into 6 pieces like a pie. Put them on pachment paper, silpat or just a buttered baking sheet. Bake at 400 degrees for 15-17 minutes.
To make the glaze:
Mix the orange juice, zest and powdered sugar.

P.S. I  cute into 8 pieces and two of my guests yesterday told me it was "so big" and they cut one in half for the two of them.

                                  Some of my flowers around the garden. Those begonias are doing pretty well!

Rhubarb Cream Cake

I have this recipe from an old recipe book. The book was made by the ladies in  a small town in Iowa.

1 yellow or white cake mix
3 cup rhubarb
1 - 1 1/2 cups of sugar
1 cup whipping cream

Mix cake as directed on box. Pour into greased 9x13 -inch pan. Layer rhubarb over cake mix. Pour sugar over rhubarb. Pour cream over sugar. Bake at 350 degrees for 60 minutes. Serve warm or cold. Served warm ice cream or whipping cream is delicious.
