Rhubarb Cream Cake

I have this recipe from an old recipe book. The book was made by the ladies in  a small town in Iowa.

1 yellow or white cake mix
3 cup rhubarb
1 - 1 1/2 cups of sugar
1 cup whipping cream

Mix cake as directed on box. Pour into greased 9x13 -inch pan. Layer rhubarb over cake mix. Pour sugar over rhubarb. Pour cream over sugar. Bake at 350 degrees for 60 minutes. Serve warm or cold. Served warm ice cream or whipping cream is delicious.

  1. Thank you for the recipe. I haven't had rhubarb in a long time. This recipe sounds ideal and looks even better.

  2. It was a good cake. It's sad how the light is so bad in that kitchen for photography. Happy Mother's Day for you!

  6. I made this cake but instead of the sugar, I used a box of strawberry dry jello sprinkled over the rhubarb. Added some color to the rhubarb and eye apeal

  7. It looks tasty, but we will not be able to try this as rhubarb is not grown here and I have never seen it in the local shops either.

    1. I missed rhubarb when we lived in Chile and Zimbabwe. Those countries don't have rhubarb. However those countries had other things that I miss now and we don't have here. Thanks for your visit Linda!
