I have some muffins yesterday. These are my favorite muffins. They are full of fiber to aid the digestive system and not only that, they are delicious!! The recipe came through my mother-in-law.
                         Favorite Bran Muffins
1 egg
1 cup milk
1 1/2 T. vegetable oil
1 1/2 cups 100% bran cereal
1 cup sifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup brown sugar packed
Beat together first 3 ingredients. Stir in Bran cereal let stand for 5 minutes. Sift in flower, baking powder and salt, blend in sugar. Add the Bran mixture till just combined, don't overmix. Fill greased muffin pan cups 3/4 full. Bake at 400 degrees 18 to 20 minutes or until done.
